Protein Pancakes!



So, as a mom of 2 boys I'm always trying to find healthy versions and alternatives to our everyday food.

You know, like trying to sneak veggies into their spaghetti or making turkey burgers instead of hamburgers.

But out of all the meals I've experimented with, this one has been an all ALL TIME HIT.

You would never think throwing together these 3 ingredients would still make pancakes taste like pancakes... But they do.

My family has these at least 2-3x a week, and I don't feel guilty about that.

Here are the ingredients...

8 egg whites
2 heaping tablespoons of cottage cheese
1/2 cup oats
*Vanilla or cinnamon optional

Mix all ingredients in a blender (putting egg whites in first).

Pour onto skillet.

Topped best with PB, banana, and 100% maple syrup.
